XCOM - Enemy Unknown: Estimating difficulty

I edited the question a bit, so it better fits the Q&A format:

I kind of don't know which difficulty is the right for me. I know this is a very subjective question, but I actually have some troubles finding a difficulty level that fits me. I tried both classic and normal and I still don't know, but let me tell you what exactly I mean:

Playing on Normal:

After two months I have

  • Laser Weaponry (Pistol,Rifle,Sniper)
  • Already opened the "Alien Base" Mission
  • No problems with any mission (even the "High Difficulty" ones)
  • No problems with Alien Terror missions
  • Didn't lose a single country (even though I have only 2 satellites)
  • Some Upgrades for my interceptors
  • No real money problems

Playing on Classic:

After one and months and a week (or two) I have

  • Nothing much, not even a life sample of an Insectoid
  • Normal weaponry
  • Already lost a country
  • Two countries about to be lost
  • A tough time on the most ">moderate" missions, but more in a challenging way
  • Not so much money
  • In the first "Terror" mission with "Very high difficulty" I got totally destroyed (saved 4 civilians then I got overrun).

As you can see there is a great gap between those two possibilites and I'm not quite sure if I expect too much/too less. Maybe on normal the difficulty will rise immensely at some point and then it is challenging enough? Or maybe I should stick with classic. Can someone help me out a bit?
